To Pepper fish take the fresh ... fish -- open the back from head to tail display your fish -- take out the backbone and wash and afterwards thoroughly dry the fish -- then rub well inside and out with a mixture of equal proportions of salt, salt petre, sugar & peppers. Put a stick through the head and hang in the air
